Crunchy Broccoli Salad with Prickly Pear Balsamic Vinaigrette

Easy and pretty salad to serve anytime of the year!

Ingredients:

For the Salad:

6 Cups   Fresh Broccoli Florets
1 Cup     Mixed Dried Berries
½ Cup    Roasted Sunflower Kernels
¼ Cup    Sliced Almonds
4 Slices  Bacon, cooked to desired crisp and crumbled
1 Small   Red Onion, Sliced

For the Vinaigrette:

2 TBSP    Fresh Lemon Juice
2 TBSP    DiVine Prickly Pear Balsamic 
6 TBSP    Extra Virgin Olive Oil
¼ Cup      Plain, Non-Fat Yogurt (Optional)
                Salt and Pepper to taste

In a large salad bowl, combine broccoli, dried fruits, sunflower seeds, almonds, crumbled bacon and red onions and set aside.

In a separate bowl, combine all the ingredients (except the yogurt) and whisk until smooth.  Add yogurt, and blend thoroughly. Pour over the salad and toss.  Add salt and pepper to taste.

Serve immediately.
