Olive Oil

Zucchini and Shrimp Pasta

This is a quick and easy pasta dish that incorporates fresh basil and zucchini!

Ingredients:

8 OZ               Peeled and deveined shrimp

4 TBLS           DiVine Garlic Olive Oil

Handful           Fresh Basil, torn

¼ TSP            Sea Salt, Pepper and red pepper flakes to taste

2 MED            Zucchini, spiralized or sliced into thin strips

¼ Cup            Parmesan Cheese

2 TBLS           White Wine

16 OZ             Pasta (spaghetti or tagliatelle) 

                       Chopped Parsley

Directions:

Place a large pot of salted (to your taste) water to boil for the pasta.  Add the pasta and cook to your taste.

 

Heat in a heavy skillet over medium heat, add 2 tablespoons of DiVine Garlic Olive Oil and brown the zucchini until tender.  Remove from pan and set aside.  While the pasta is cooking, in the same pan, add the remaining 2 tablespoons of DiVine Garlic Olive Oil, add the shrimp and white wine.  Cook until just pink, add the zucchini to reheat, add the basil, salt and pepper to taste.  Add red pepper flakes to your taste.

 

Drain the pasta and reserve a small amount of the pasta water for the sauce.  Add shrimp mixture to the pasta.  Add some of the pasta water, if necessary and finish with parmesan cheese and chopped parsley.
