Roasted Greek Style Potatoes

The oven temperature may seem too high, but don’t fear, the wedges are thick enough that they will cook through without overbrowning.

Ingredients:

3 (8OZ)       Baking potatoes
1 TBSP       Minced fresh oregano
1½ TBSP    DiVine Lemon Olive Oil
½ TSP        Kosher salt
½ TSP        Fresh ground black pepper
1 TSP         Minced fresh oregano
1 OZ           Crumbled Feta
2 TSP         Lemon Juice

Directions:
Preheat oven to 450 F with the baking (cookie) sheet in the oven.

Cut each potato lengthwise into 8 wedges, add to a large mixing bowl.  Toss with DiVine Lemon Olive Oil, add 1 tbsp fresh oregano, salt and pepper and coat.  Remove baking sheet from oven when it has hit 450 F and spray with cooking spray.  Add the potato mixture and bake for 30 minutes.  Stir half way through the cooking time.

 

Remove from oven and add the remaining fresh oregano, lemon juice and feta cheese and serve.

This makes a great side dish for grilled steak or salmon.
